Signatory Vintage – Independent Scotch Whisky Bottler

Signatory Vintage is one of Scotland’s most respected independent single malt whisky bottlers. Founded in 1988 by Andrew Symington, Signatory has gained international recognition for their uncompromising approach to quality and transparency.

Philosophy and Style

Unlike distilleries that produce their own brands, Signatory sources casks directly from distilleries across Scotland. Each bottling is typically a single cask or small batch, often bottled without chill filtration and without added colour, to preserve the whisky’s natural character.

All bottles are labelled with the distillation date, bottling date, cask number and bottle strength, making them popular with enthusiasts and collectors.

Caol Ila Distillery – Smoke and finesse from Islay

Caol Ila Distillery (pronounced “Cull Ee-la”) is idyllically situated on the northeast coast of the Scottish island of Islay, overlooking the strait to the neighbouring island of Jura – “Caol Ila” means “Sound of Islay” in Gaelic. The distillery was founded in 1846 by Hector Henderson and is today an important part of Diageo’s portfolio of single malts.

Smoked elegance from Islay

Caol Ila is known for its refined, smoky style, which distinguishes it from the heavier and more medicinal Islay malts such as Laphroaig and Ardbeg. The whisky here is often characterised by a balanced peat smoke, combined with citrus, sea salt, herbs and light sweetness – a complex but elegant flavour profile.

Production and significance

Caol Ila is the largest distillery on Islay in terms of capacity and plays a central role as a supplier of smoked malt for blended whiskies, especially Johnnie Walker. The distillery was modernized in the 1970s and is today known for both consistent quality and high volume production.
